Minestrone (With pork):
Melt a knob of butter with three table spoon of olive oil
Stir in the shallots- five small shallots
Fry till it is a little golden
Stir in the celery and carrot - one carrot and half a stalk of celery
Fry till a little moisture from the vegetable starts to ooze out
Add Italian herbs, black pepper and extra rosemary
Add some chilli flakes for spiciness and a hearty meal
Stir fry till all the vegetables are coated with the sauce
Put into pot, add tomato- around four to five
Add a little water around half a cup to simmer
Let it boil and add some meat of your choice
In this case, pork
Simmer for another 15 to 20 minutes to soften the vegetables with the meat.
Add seasoning to your liking~
Viola! Home made minestrone soup made quick and easy!
